How's this for an experiment?
You know how sometimes you get home from vacation and the food in your fridge is getting close to the expiry date? Ever wonder what to do with it?
After five days in Vienna, I have a liter of milk in the fridge with one day left to go. That's a lot to drink in one day, so I made yogurt. A friend told me about a couple times he tried, and his results had varying success, but sounded easy enough. I made my first batch just before vacation, and it had turned out pretty good! Here's how to do it:
Start just before you go to bed. Put the milk in a pot, and put that pot inside a bigger pot with some boiling water. Stir milk constantly. When the milk starts to froth, take the little pot out of the big pot. Wait until the milk feels hot when you touch it, but not hot enough to make you pull your finger out. Mix in a spoonful of yogurt with active bacteria. Then put it someplace warm for the night, like the oven with the light on. In the morning, mix it up right away, and put it in the fridge when it cools a bit. When you get home from work it should be perfect.
I don't have an oven light, so I used a heated floor. My heated floor is in the bathroom, and the warmest spot is withing reach of the toilet. Yum.
Anyways, the yogurt turned out great on my first try with fresh milk. With nearly expired milk, however, I couldn't get the milk to froth, and my bacteria came from the previous batch from before vacation. The final result still looks and smells like yogurt...
Okay... so now the eggs expire today. I gotta use up 6. Potato omelette is a great way to use up eggs! Delish! But no sour cream in the house, which is usually great with it. Instead, I have 2 day old unsweetened/unflavoured yogurt. Hmmmm....
